Speedy Shepherds Pie
500g finely minced beef
1 large onion, finely chopped
1 Tablespoon vegetable oil
445g can vegetable or beef soup
1/4 cup tomato sauce
2 Tablespoons fresh parsley, chopped
Mashed Potato for topping
Pre-mash your potatoes.
Heat some oil in a pan and brown the onion and minced beef. Stir in the soup and sauce and bring to the boil. Stir through the parsley and our the mixture into a pie dish.
Cover the meat mix with the mashed potato and bake at 180 C (moderate oven) for 30 minutes, or until browned and bubbling hot.
