Chicken Sausage and Potato Bake

Serves 4

1 tablespoon olive oil
12 medium-size chicken sausages
300g jar pasta sauce
400g can crushed tomatoes
1.5kg potatoes, roughly mashed with 1/3 cup sour cream and 1/4 cup hot milk
100g mozzarella cheese, sliced

1. Preheat the oven to a moderate 180°C. Lightly grease a large shallow casserole dish of about 8-cup capacity.
2. Heat some oil in a large frying pan and add the sausages. Cook over a low-medium heat for 8-10 min. Stir through the pasta sauce and tomatoes. Transfer to the baking dish.
3. Top with mashed potato and season with salt and pepper. Scatter cheese over the top and bake for 15-20 min or until golden brown. Serve with baby peas and crusty bread.
