Sustain Banana Muffins
1 1/4 cups self-raising flour
1/2 tsp bicarbonate of soda
1/2 cup sugar
2 1/2 cups Kellogg’s Sustain, crushed down to 2 cups
1 egg, lightly beaten
3/4 cup low fat milk
1 medium ripe banana, mashed
1/3 cup natural yogurt
1/4 cup vegetable oil, extra
1/4 cup Kellogg’s Sustain
Sift flour, bicarbonate of soda and sugar together into a bowl.
In a large mixing bowl stir together Kellogg’s Sustain, egg, milk, banana, yoghurt and oil.
Stand for 1 minute or until mixture is slightly softened
Add flour mixture stirring until just combined. Don’t over beat.
Spoon mixture evenly into a greased muffin tray.
Sprinkle each muffin with a little of the extra Kellogg’s Sustain.
Bake at 200ºC for 20-25 minutes or until golden brown.
Makes 25 muffins (approximately)
