Lemon-Sauced Pudding

Lemon-Sauced Pudding

1 cup plain flour
1/2 cup sugar
2 tsp baking powder
2 tsp grated lemon peel
1/8 tsp salt
1/2 cup milk
2 Tbsp cooking oil

1 3/4 cups hot water
1/4 cup lemon juice
3/4 cup sugar

Measure first 7 ingredients into a bowl and mix well.
Turn into a 3.5 litre slow cooker.

Stir hot water, lemon juice and sugar together in a separate bowl.
Pour carefully over batter.
Place 5 paper towels between top of slow cooker and lid.
Cook on HIGH for about 2 hours.
