Minute Steak Nicoise
300gms beef fillet
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, finely sliced
3 anchovy fillets, finely chopped
salt n pepper
2 tomatoes blanched, refreshed under cold water, peeled and finely chopped
quarter cup small black olives
2 tbsp chopped parsley
200gms green beans, blanched until tender and refreshed.
Thinly slice the meat into approx 5mm thicknesses, cutting against the grain.
Heat the oil and butter in a large heavy-based saucepan.
Add garlic and anchovies, cook until garlic starts to colour.
Add meat, seasoned with both salt and pepper.
Brown the meat, making sure that the garlic does not burn.
Turn after about 30 seconds.
After about 20 seconds, add the chopped tomato, olives and parsley.
Remove meat, throw in the beans and toss.
Serve meat on top of sauce.
