Makes 1 cup
2 large red capsicums, seeded and chopped
1 cup brown sugar
1 cup brown vinegar
1 Tbsp grated ginger
1 clove garlic, finely chopped
Combine all ingredients in a small saucepan. Bring to the boil.
Reduce heat. Simmer 1 hour or until mixture is syrupy. Set aside to cool completely.
Store in refrigerator.
