Blueberry and Banana Muffins
300g (2 cups) plain flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
150g fresh or frozen blueberries
2 ripe bananas, mashed
1/4 cup honey
1/4 cup vegetable oil
1 large egg
3/4 cup milk
4 large strawberries, hulled and halved
Icing sugar, to dust
1. Preheat oven to 190Â°C (fan-forced). Line 8 holes of a 12-hole, 125ml (1/2-cup) capacity muffin tin with paper patty cases.
2. Sift the flour, baking powder, cinnamon and a pinch of salt into a large bowl. Add the blueberries and bananas and, using a fork, lightly toss until well combined.
3. In a smaller bowl, whisk together the honey, oil, egg and milk. Add to the flour and fruit mixture, stirring until just combined.
4. Spoon into the prepared tin and top each muffin with half a strawberry. Place in preheated oven and bake for 20 minutes. Dust with icing sugar and serve.
