Banana Lemon Loaf

90g butter
1/4 cup brown sugar
grated rind of 1 large lemon
1 large egg
2 bananas – mashed well
1 1/2 cups of SR flour
3/4 cup grated carrot
1/3 cup milk

1 1/4 cup icing sugar
2 tsp butter
1-2 Tbsp lemon juice

Beat together butter, sugar and lemon rind. Add the egg and beat well with the mashed bananas. Sift together flour and salt, add with the carrot and mix gently to a soft consistency with the milk. Turn into a greased loaf pan and bake in moderate oven for 40 minutes.

Sift icing sugar into a small bowl, stir in butter and lemon juice. Heat in microwave for 5-6 seconds, then beat briskly. Add a little water if a thinner icing is needed.
