Pink Cake

Pink Cake

125g butter, softened
1/2 cup castor sugar
3/4 pack pink jelly crystals
2 eggs
2 cups self raising flour
1/2 cup milk

Mix together butter, castor sugar and jelly crystals. Add eggs and mix. Stir in flour and milk. Bake at 180C for 35-45 minutes.

Pink Icing:
Combine butter, icing sugar, 1-2 tsp jelly crystals and hot water to make icing. Sprinkle the remaining jelly crystals over the icing.
