Microwave Pear Pudding

Microwave Pear Pudding

100g SR flour
100g brown sugar
100g unsalted butter, softened
2 eggs
Handful of sultanas
3 tsp ground cinnamon
2 x 400g cans pears in syrup, drained and roughly chopped
Icing sugar to dust

Put flour, brown sugar, butter and eggs in a bowl. Beat for a few minutes with an electric hand beater until light and fluffy.

Add sultanas, cinnamon and pears. Gently mix with a wooden spoon and spatula. Transfer into a large lightly buttered microwave-proof dish, spreading out evenly.

Place on a rack in the microwave and cook on High for about 10 minutes until light and puffy. Remove and set aside for a few minutes before dusting with icing sugar.

Serve with vanilla ice-cream or a dollop of cream.
