Baked Salmon Frittata
185g can red salmon, drained
2 medium potatoes, thinly sliced
2 spring onions, chopped
small can of sweet corn kernels, drained
4 eggs, beaten
1/2 cup cream
salt and black pepper
handful of fresh basil or dill
1. Layer salmon, potatoes, onions and sweet corn in a greased pie dish or ovenproof dish.
2. In a bowl, beat eggs and cream together, season with salt and pepper and stir in herbs.
3. Pour egg mixture over salmon mixture and bake uncovered at 180°C for 30-45 minutes or until nicely browned.
4. Serve warm with steamed greens or cold with salad.
