Sausages with Chilli

Sausages with Chilli

6 mixed sausages
1 red pepper cut into slices
1 yellow pepper cut into slices
1/2 red onion cut in to slices
1 chilli finely sliced
2 cloves of garlic thinly sliced
1 tbsp of salted capers
2 tbsp of torn flat leaf parsley
2 tbsp of torn basil
6 tbsp of extra virgin olive oil
2 tbsp of aged balsamic vinegar
Salt and freshly ground black pepper

# Add 2 tbsp of oil to a hot pan, cook the onion, garlic, chilli and peppers till soft. Approximately 5-8 minutes.
# In 2 tbsp of oil lightly brown the sausages for approximately 5-8 minutes.
# Combine the pepper mix with the sausages, capers, half the basil and parsley. Season with salt and pepper and cook in a 180ºc for 5 minutes.
# Remove from the oven and add the rest of the basil and parsley, 2 tbsp of olive oil and the balsamic vinegar. Finally season with salt and pepper.
# Serve hot with lots of crusty bread. Enjoy.
