Mango Fruit Cake
1 x 425g Mango slices in natural Juice
500g Mixed dried fruit
1/2 cup water
1 1/2 teaspoons bi carbonate of soda
1 1/2 cups self raising flour
2 eggs – lightly beaten
Grease a 15cm x 25cm loaf pan. Line base and sides with baking paper.
Combine undrained mango slices, mixed fruit and water in a large pan.
Bring to the boil and simmer uncovered for 1 minute.
Allow to cool
Stir in combined sifted bi carbonate of soda and flour with the eggs.
Pour mixture into the prepared tin.
Cook in a moderately slow oven (160’c) for about 1 hour or until cooked when tested.
Allow cake to cool in pan.
