Iced Christmas Pudding
1/2 cup each sultanas, currants and chopped raisins
1/4 cup each chopped glace cherries, glace pineapple and mixed peel
1/4 cup brandy
1L softened vanilla ice-cream
1/2 cup cream
1/2 cup toasted, flaked almonds
1/4 cup chocolate bits
Strawberry sauce and strawberries to decorate (optional)
1. Mix nuts with brandy. Cover with plastic wrap and leave for several hours or overnight.
2. Place softened ice-cream and cream in a large bowl and stir in fruits, almonds and chocolate bits.
3. Spoon into a pudding basin (7cup capacity) and cover with freezer wrap. Freeze until required.
To Serve:
Remove freezer wrap and immerse basin in hot-not boiling- water for 20 seconds. Unmould pudding onto a chilled serving plate and serve with custard or Strawberry Sauce.
Strawberry Sauce:
Puree a punnet of washed and hulled strawberries in a blender or food processor and stir in 2-3 tablespoons of strawberry topping.
