Chocolate Bread and Butter Pudding
2 1/2 cups milk
200g dark chocolate, roughly chopped
2 tsp vanilla
1 Tbsp cocoa mixed with 2 Tbsp warm water
1 Tbsp brown sugar
4 eggs, beaten
8 slices crustless bread
1 Tbsp butter
1 Tbsp currants
# Combine milk, chocolate, vanilla, cocoa/water mix and sugar in a saucepan.
# Cook stirring over low heat until smooth and cool.
# Whisk in eggs.
# Butter bread; cut into squares and arrange in a deep 6 cup dish.
# Sprinkle currants over bread and pour custard mixture over.
# Bake at 160°C for 40 minutes.
# Sprinkle the pudding with cocoa and icing sugar. Serve with cream or ice-cream.
