Chicken Soup for the Soul
6 chicken wings/legs/pieces
2 cups chicken stock
1 cup frozen mixed vegetables, or fresh soup mix
1/2 cup rice, uncooked
salt and pepper to taste
fresh coriander, chopped
1. Boil chicken in water.
2. Add stock, vegetables, rice, coriander, salt, pepper and squeeze of lemon.
3. Boil until chicken falls off bone, and rice is cooked.
4. Serve with crusty bread and extra lemon.
