Chewy Chocolate Weetbix Slice
1 cup brown sugar
125g unsalted butter, melted
1 egg, lightly beaten
1 teaspoon vanilla essence, optional
2 tablespoons cocoa powder
1 cup self raising flour
1/2 cup shredded coconut
1 cup crushed weetbix (about 4-5)
250g cooking chocolate
2 tablespoons cream
1. Preheat oven to 180Â°C or 160Â°C for fan forced. Line a 20cm square slice tin.
2. Combine ‘slice’ ingredients in a bowl. Press into the prepared pan. Bake for 20 minutes.
3. Melt chocolate and cream in a bowl over a pan of simmering water. Cook until melted. Pour over warm base and allow to cool. Cut into squares and serve.
