Caramel Banana Pudding

Caramel Banana Pudding

Serves 4

1 tablespoon butter
2 tablespoons brown sugar
4 bananas, sliced
50g butter, chopped
3/4 cup brown sugar
1 egg
1 cup self-raising flour, sifted
1/2 cup milk

1. Grease a 23cm pie dish. Sprinkle with brown sugar. Arrange bananas over sugar.
2. Cream butter and sugar together until light and fluffy. Add egg. Beat well. Fold through flour and milk alternately until well combined.
3. Pour batter over bananas. Bake in a moderate oven (180°C) for 30 to 40 minutes or until firm and golden.
