Lemon Pudding Surprise

Makes 6 individual bowls or one big one

2 lemons, zest of 1 and juice of both
200g granulated sugar
4 eggs, separated
25g butter
50g plain flour
500g milk
Boiling water for the oven

1. Preheat oven 180 C.
2. Place the lemon zest into the TM bowl. Add the sugar and grind 20 seconds/ Speed 10.
3. Add lemon juice, egg yolks, butter, flour and milk. Mix 30 seconds/Speed 8.
4. Meanwhile using whisk of an electric mixer, beat egg whites until stiff. Add to the TM bowl. Mix 15 seconds/Speed 3.
5. Scrape down the sides of the bowl with the spatula. Mix again 5 seconds/Speed 3 then pour into either a buttered oven-proof dish. (Suggest using a bigger, shallow dish like the oval ones you can get, OR individual bowls).
6. Set the dish/es into a roasting pan and pour boiling water from the kettle into the pan so water comes halfway up the sides of the pudding dish/es.
7. Bake anywhere from 35 minutes to 45 minutes depending on your oven and size of bowl/s.
