6 medium apples
2 tablespoons water
2 tablespoons caster sugar
1 teaspoon grated lemon rind or a pinch of cinnamon
2 egg whites
Peel, core, and slice the apples thinly.
Add water, cover and simmer until soft.
Add sugar, stir until smooth, light and sugar is dissolved; add lemon rind or cinnamon chill thoroughly.
Beat egg whites until stiff, fold in the apple mixture.
Divide into individual dishes.
Serve with custard made from the egg yolks.
