Sticky Date Crepes

1 cup (120g) plain flour, sifted
2 tsp caster sugar
40g reduced-fat canola spread, melted
3 eggs
1 1/2 cup (375m1) skim milk
4 x 95g tubs NESTLE Diet Sticky Date Pudding
1/3 cup (80ml) maple syrup
30g pecan nuts, toasted, coarsely chopped

1. Process flour, sugar, spread, eggs, a pinch of salt and milk in a food processor until combined. Transfer to a jug. Cover with plastic wrap. Place in the fridge for 30 minutes to rest.
2. Heat a medium (20cm base) non-stick frying pan on medium. Spray with oil. Pour in 1/4 cup (60ml) of mixture to cover base. Cook for 1 minute or until golden. Turn. Cook 1 minute. Continue with remaining batter to make 12 crepes.
3. Spoon a little pudding mixture onto each crepe. Fold to form a triangle. Arrange 2 crepes on each
serving plate. Drizzle with maple syrup. Sprinkle with pecan nuts. Serve.
