1 spray low-fat cooking spray
2 medium portion potato(es), scrubbed
1 pinch salt
1 teaspoon pepper
50 g reduced-fat cottage cheese
50 g Fresh Salsa, oil-free
1. Preheat oven to Gas Mark 6/200°C/400°F. Coat a baking sheet with cooking spray. Cut potatoes into wedges, leaving the skin on. Lightly spray wedges with cooking spray and season to taste.
2. Bake until golden brown, about 40 to 60 minutes, turning after 20 minutes.
3. Top with cottage cheese and salsa.
