Mixed Roast

Serves 4

1 kg piece bolar blade of beef
4 potatoes
4 chunks pumpkin
spray olive oil
4 field mushrooms
2 chokos, peeled, cored and quartered
2 red onions, halved
2 roma tomatoes, halved
1 capsicum, seeded and quartered
8 garlic cloves

1. Arrange beef, potatoes and pumpkin in a baking dish. Spray with oil.
2. Bake in a moderate oven (180C) for 30 minutes. Remove from oven.
3. Add mushrooms, chokos, onions, zucchinis, tomatoes, capsicum and garlic.
4. Spray with a little extra oil. Bake for a further 10 to 15 minutes or until vegetables are tender (test with a skewer).

Serve with horseradish and sprinkle with thyme if desired.

Variation: Use chicken, pork or lamb instead of beef, if preferred.
