Honey-Glazed Drumsticks and Cheesy Baked Potatoes
4-8 chat potatoes
3 tablespoons low-salt soy sauce
3 tablespoons hoi sin sauce
1 tablespoon honey
1 1/2 tablespoons olive oil
1 clove garlic, crushed
4 chicken drumsticks
1-2 carrots, sliced lengthwise
1-2 cucumbers, sliced lengthwise
1. Preheat the oven to 180Â°C (fan-forced). Bring a saucepan of salted water to the boil over medium-high heat. Add the potatoes and simmer for 5 minutes. Drain and set aside.
2. In a bowl, combine the soy and hoi sin sauces with the honey, olive oil and garlic. Add the drumsticks and coat well. Cover and place in the fridge for 15 minutes.
3. Cut across the top quarter of the potatoes and replace to make lids. Place in one half of a baking dish and coat with olive oil. Remove the drumsticks from the marinade and place in the other half of the dish. Bake for 20 minutes.
4. Remove from the oven. Place the cheese under the potato lids and return to the oven for 5 minutes. Serve with the vegetable straws.
