Lemon Poppy Seed Friands
5 eggwhites, lightly beaten
125 reduced-fat canola spread, melted
1 cup (100g) almond meal
3/4 cup (125g) icing sugar mixture
1/2 cup (75g) plain flour
1 Tbsp poppy seeds
150g tub NESTLE Diet Yogurt Treats Lemon Tart
3 Tbsp breakfast marmalade, melted, to ice
1. Preheat oven to 190°C. Spray 12 1/3 cup-capacity rectangular friand holes with cooking oil.
2. Use an electric beater to whisk eggwhites in a large, clean, dry bowl until soft peaks form. Gently stir through the spread, almond meal, sugar and flour until just combined.
3. Fold through the poppy seeds and yogurt Spoon mixture evenly into prepared friand holes. Bake for 25 minutes or until cooked. Set aside for 2 minutes. Turn out onto a wire rack to cool. Brush with melted marmalade to serve.
