Suitable for freezing
1 tablespoon ricotta cheese
Sprinkle of grated Parmesan cheese
Natural yoghurt for extra liquid, if needed
1. Cut the zucchini into thick slices and steam until soft.
2. While still hot, blend with ricotta cheese and sprinkle of Parmesan to taste.
3. Add natural yoghurt if necessary.
Many variations are possible. For example; substitute 1/2 cup cubed pumpkin, carrot or sweet potato for zucchini. Leave out the Parmesan cheese and use steamed apples or pears, or fresh paw-paw, rockmelon or peaches.
