Gingerbread People

Gingerbread People

Makes about 24

2.5 tablespoons golden syrup
6 tbsp butter or margarine
1/2 cup sugar
2 cup flour
1 tsp bicarb soda
3 tsp ground ginger
1 egg
currants
red glace cherries
smarties
1 tablespoon jam

Preheat oven to 180C and grease oven trays
Put golden syrup in a jug and stand jug in a saucepan of hot tap water until syrup is warm and soft.
Put butter and sugar in one mixing bowl and mix with an electric mixer or wooden spoon until creamy.
Separate the egg. Set aside egg white and stir yolk into mixing bowl with creamed butter and sugar. Mix again.
Place a strainer over another mixing bowl. Sift in flour, bicarb soda and ginger.
Slowly add flour mixture and warmed golden syrup to the creamed butter and sugar, mixing well with a wooden spoon.
Take mixture out of bowl and place to kitchen counter. Knead lightly.
Roll out mixture with rolling pin to depth of 3mm.
Cut out gingerbread people, using a gingerbread cutter.
Carefully lift gingerbread people onto greased baking trays with an eggslice. Into each biscuit, press in currants for eyes and glace cherry for a nose.
Put baking trays in the oven and cook for 15mins. Turn off oven and allow biscuits to cool for approx 15 mins.
When cold, decorate biscuits with liquorice for a mouth and smarties for buttons, attached with a little jam.
