Bread and Butter Pudding
Age: 12 months +
2 slices white bread (crusts removed)
1 1/2 cups (310ml) milk, formula or breastmilk
1 tablespoon caster sugar
1/4 teaspoon vanilla essence
pinch ground nutmeg
Spread bread lightly with butter, cut into small triangle-shaped pieces. Divide bread among four 1/2 cup (125ml) greased heatproof dishes, place dishes in baking dish. Whisk milk, eggs, sugar and vanilla in medium jug; pour egg mixture over bread, sprinkle with nutmeg. Pour enough boiling water into baking dish to come halfway up sides of dishes. Bake, uncovered in a moderate oven about 20 minutes or until puddings are just set.
Makes 4 servings.
