Bacon and Spinach Breakfast Quiche

110g bacon chopped
200g frozen spinach, thawed
225g cheese
1 spring onion chopped
6 eggs medium
1/2 cup thickened cream

Fry the bacon and spring onion until cooked. Mix remaining ingredients then add bacon and onion. Add pepper to taste. Pour into greased dish and pop into preheated oven, usually 180C for about 30 mins. Test if cooked by piercing with knife – if it comes out clean then it’s ready. Let cool for 5 mins then turn onto plate.
