250g Marshmallows, pink and white
250g Cooking chocolate or chocolate pieces
1/2 cup walnuts or peanuts
1 cup glace cherries, halved
1/2 cup sultanas
1/2 cup coconut
Line 20cm x 30cm lamington pan with foil.
Roughly chop marshmallows into pieces with wet scissors and place into a large bowl. Chill for 5-10 minutes.
Melt chocolate and copha together over a low heat, or use a double saucepan. Cool for 3-5 minutes.
Combine nuts, cherries, sultanas and coconut in a bowl with marshmallow, then pour over the chocolate mix and fold through.
Spoon mixture into pan and leave to set.
Cut into pieces.
Variation: Place nuts, cherries, fruit, coconut and marshmallows into a lamington pan and pour over chocolate mix. Set, then cut into pieces.
