Honey Wheat Loaf

2 1/2 cup stone-ground wholemeal flour
1 1/2 cups plain flour
2 tsp salt
1/8 cup wheat germ
1 Tbsp dried yeast
1/6 cup honey
1 cup milk
1/8 cup oil

Preheat oven to 200C. Sift flours and salt together and add wheat germ and yeast. Mix together water, honey and milk and heat to lukewarm. Make a well in the flour mixture, add the honey mixture and oil and mix to a sticky dough with a knife. Knead on a lightly floured surface for 5 mins. Pout in a lightly oiled bowl, cover and leave in a warm place until doubled in size. Lightly grease 1 large or 2 small loaf tins. Knead dough and shape into two round loaves. Place in greased loaf tin. Brush top with milk and sprinkle with stone-ground flour. Cover with greased plastic wrap and put in a warm place until doubled in size. Bake for 30 minutes. Cool on wire rack.
