French Toast with Caramelised Apples and Pecans
2 tablespoons butter
2 tablespoons brown sugar
2 Granny Smith apples, peeled, cored and each cut into 8 wedges
1/4 cup roughly chopped pecans
65ml (1/a cup) pure cream
2 tablespoons caster sugar
4 slices white toast bread (preferably 1-2 days old)
1. Melt the butter in a frying pan over medium heat. When sizzling, add the brown sugar and stir for 1 minute. Add the apples and pecans and cook for 4-5 minutes, until softened.
2. Beat the eggs with the cream and caster sugar. Lightly grease a frying pan. Dip a slice of bread into the egg mixture, soaking both sides. Cook bread over medium heat for 2-3 minutes each side. Repeat with the remaining bread. Spoon warm apples over the toast.
