Chewy Apricot Coconut Cookies

2 eggs
1 1/3 cups firmly packed brown sugar
1/2 cup vegetable oil
1 tsp vanilla
1 cup plain flour
3/4 cup SR flour
1/2 tsp bicarbonate of soda
2 Tbsp maple syrup
1 cup chopped dried apricots
1 cup rolled oats
1 cup flaked coconut
1/4 cup sunflower seeds

Beat eggs and sugar until light. Add oil, vanilla and maple syrup. Stir in mixed dried ingredients. Cover and refrigerate 1 hour. Roll level tablespoons of mixture into balls and place 5cm apart on greased oven trays. Flatten slightly. Bake in moderately hot oven for 10 minutes or until lightly browned. Stand 5 mins before transferring to wire racks to cool.
