Cherry Ripe Slice
1 packet malt biscuits
3 oz copha
200g packet chopped glace cherries
1 tin sweetened condensed milk
250g packet coconut
1 packet chocolate melts
Lay malt biscuits flat with bottoms facing up on a lamington tray. Melt copha.
Mix cherries, milk and coconut into copha. Press mix into the tray, on top of the malt biscuits. Melt chocolate and pour over the cherry mix. Refrigerate until hard.
Tip: When the chocolate is completely hardened, it is very difficult to cut. Try running a knife through the chocolate when it is still soft to provide a guide for the slices.
