Banana Buttermilk Pancakes

Makes about 8 pancakes

1 cup chopped banana (about 2 medium ripe bananas)
3/4 cup buttermilk
1 Tbsp light olive oil
1 egg
1/2 cup plain flour
1/4 tsp bicarbonate of soda
1/4 cup un-toasted muesli
1 Tbsp maple syrup
150ml low fat vanilla berry fruit yoghurt

Blend the banana, buttermilk, oil and egg together in a bowl with a fork. Mix the flour, muesli and bicarbonate of soda together.

Slowly pour the wet ingredients into the dry and stir to make a smooth batter.

Brush a little oil in a non-stick fry pan and heat over a medium heat.

Pour about 1/4 cup of the batter into the pan and cook for 2-3 minutes each side. Cover the cooked pancakes with a clean tea-towel while cooking all the batter. Repeat with remaining batter. Serve drizzled with maple syrup and vanilla berry fruit yoghurt.
