Zucchini Fritters

Zucchini Fritters

Serving size: Serves 4

Fritters:
2 zucchinis, grated
2 shallots, chopped
1/2 cup plain flour
1/2 teaspoon baking powder
1 egg, lightly beaten
100g fetta cheese
1/2 teaspoon allspice
1/2 tablespoon chopped dill
1 tablespoon chopped mint

Combine all the fritter ingredients. Make into patties.
Heat olive oil in a large frying pan. Place zucchini patties into the pan and cook for 2 minutes each side until cooked.
