Banana Bread

Banana Bread

1 1/2 cups (225g) plain flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 cup (110g) caster sugar
1 egg
1/3 cup (80mL) sunflower or canola oil
1 tsp vanilla extract
4 ripe bananas, mashed
65g pecan nuts, chopped (optional)

Preheat oven to 180C. Grease and line 900mL loaf pan. Sift flour, baking powder, cinnamon and sugar with 1 tsp salt. In a separate bowl, combine oil, egg and vanilla. Add to the dry ingredients with bananas and nuts and fold until just combined – do not over mix. Place into loaf pan and cook for 50 mins. Leave in tin for 10mins before turning out.
