Apple Coconut Pie
125g butter
2 cups coconut
1/2 cup plain flour
1/4 cup sugar
410g can pie apples
Melt butter. Place in large bowl and stir in coconut, flour and sugar. Press half the mixture into pie plate (base diameter of 18cm). Top with apples and sprinkle with remaining coconut mixture. Cook at 180°C for 30 minutes. Serve with ice-cream, cream or custard.
