White Chocolate, Cherry and Coconut Balls
250 grams white chocolate
1/3 cup cream
100 grams glace cherries
1 cup sponge finger biscuit crumbs
1 1/2 cups shredded coconut for rolling
1. Melt the chocolate in a heat proof bowl over a pot of simmer water. Remove from heat.
2. Stir in cream and biscuit crumbs. Cool mixture to room temperature and gently stir through cherries until just combined.
3. Roll teaspoons of the mixture into balls and then roll in coconut. Keep in the fridge.
