Tomato and Basil Quiche
1 leek, sliced
1 egg yolk
150mL thickened cream
1/2 cup grated cheese
1 small vine ripe tomato, diced
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
salt and pepper to taste
1 tablespoon Parmesan cheese
1. Melt butter in a saucepan, add leek. Cook until tender; cool.
2. Combine eggs, cream and cheese. Add leek, herbs and tomatoes.
3. Place pastry bases into preheated Pie Maker. Pour mixture into the base, sprinkle Parmesan on the top and close. Cook for 8-10 minutes then turn off and leave for 3 minutes to set.
