Swedish Meatballs

Swedish Meatballs

1 cup milk
1-1/2 lbs. Ground meat
1 med onion, chopped
1/8 tsp nutmeg
1/8 tsp ginger
1 tsp. Salt
1/4 tsp. Pepper
3/4 cup flour
2 eggs
4 Tbsp Flour
2 cup beef stock

Heat the milk but do not boil. In separate bowl combine the beef, chopped onion and spices. Add flour slowly blending thoroughly. Gradually mix in milk. Add and beat until the mixture is light and fluffy, about 5 minutes. Cover and refrigerate for 1/2 hour. The roll beef into 1-inch balls, brown meatballs under the broiler. Remove and set aside. Add flour to broiler beef drippings and stir until smooth. Gradually stir in beef stock. Bring to a boil. Season with salt and pepper. Simmer for 5 minutes. Add meatballs to the sauce. Simmer gently for 15 minutes.
