Makes about 1 dozen muffins
1 Tbsp olive oil
1 clove garlic, crushed
1 cup mushrooms, diced
1 zucchini, grated and squeezed of excess liquid
1 organic egg
1 Tbsp flour, preferably spelt
1/2 cup feta cheese, chopped roughly
1/2 cup mixed, fresh herbs like basil, parsley or coriander
1 can tuna in oil or 1/2 cup smoked trout, flaked
1 tsp salt or soy sauce
SautÃ© mushrooms and zucchini in oil and garlic until soft.
Put into a mixing bowl with the rest of the ingredients and mix.
Spoon mixture into individual, non-stick muffin cases.
Bake for 10-15 minutes or until golden brown at 180 C.
Let cool and then wrap in wax paper and freeze. Pull out of the freezer as needed.
