Savoury Breakfast Muffins
1 1/2 cups SR flour
2 cups grated cheddar cheese
1/2 cup milk
salt and pepper to taste
2 tablespoons sun-dried or semi-dried tomatoes, drained
fresh herbs as available, eg parsley, thyme, basil, chives
Mix first five ingredients together in large bowl.
Halve mixture. Add tomatoes to one half and mix in, add herbs and ham to the other half and mix in.
Place large spoonfuls into greased 1/2 cup muffin tins.
Bake 210 C for 10 mins.
Makes 12 muffins – 6 of each type.
