Rocky Road Ice-Cream Muffins
4 chocolate chip muffins
1 cup mini marshmallows
4 scoops vanilla ice-cream
1/2 cup chocolate fudge sauce
1. Cut a shallow cone shape out of the top of each muffin, leaving a 1cm border around edges.
2. Place 1 muffin onto a microwave-safe plate. Drop 5 marshmallows into cavity. Cover with a damp paper towel. Microwave on MEDIUM (50%) power for 30 seconds or until warm. Repeat with remaining muffins.
3. Top muffins with ice-cream. Sprinkle with remaining marshmallows. Drizzle with hot chocolate fudge sauce.
4. Serve immediately.
