Roasted Garlic Dip
This is a nice tasty dip for celery or broccoli, or it is great spread on steak or chops.
1 large head of garlic
1 cup of ricotta cheese
1/4 tsp pepper
salt to taste
Heat oven to 190C. Wrap garlic in foil an place in centre of oven, cook for 1 hour.
Remove from oven and cool until you can handle it.
Separate into cloves and pink each clove so that the flesh pops out – into processor bowl Add cheese and seasonings and puree about 15 seconds. Transfer to small bowl and serve.
