Mock Cream

1 1/2 tablespoon milk
3/4 cup sugar
1/4 cup water
1/2 teaspoon gelatine
1 1/2 tablespoon water, extra
180g unsalted butter
1 teaspoon vanilla essence

Combine milk, sugar and water in pan, stir over heat, without boiling till sugar is dissolved. Sprinkle gelatine over extra water, stir into milk mixture, and stir till dissolved. Cool.

Beat butter and essence in small bowl with electric mixer till as white as possible, gradually add cold milk mixture; beat until light and fluffy. Mixture will thicken on standing.
