Mem’s Mums Pumpkin Soup
5 1/2 cups pumpkin chopped to 1/2 inch squares
2 onions, roughly diced
4 Tablespoons butter (or margarine)
4 cups water
1 cup milk
1. Cook onion and pumpkin in butter for 10 minutes.
2. Add water and cook gently until pumpkin is very tender.
3. Puree with milk and season with salt and pepper.
4. Simmer for 20 minutes and serve with cream if desired.
