Chocolate Oat Bars

Chocolate Oat Bars

125g butter, melted
1 cups (220g) firmly packed brown sugar
1 eggs, beaten lightly
1 teaspoons vanilla essence
1 1/4 cups (187g) self-raising flour
1 1/2 cups (135g) rolled oats

Filling:
150g chocolate, dark white or milk chocolate, chopped
half a can sweetened condensed milk about 195g
15g butter, chopped
1/2 cup (60g) chopped/crushed nuts
1 teaspoons vanilla essence

Preheat the oven to moderate (180°C/160°C fan-forced). Lightly grease a standard slice pan; line pan with baking paper to cover base and extend over two opposite sides.

Melt butter. Combine butter, sugar, egg and essence in a large bowl. Add sifted flour and oats; mix well. Divide mixture into 2 portions one a bit more than the other (a 2/3 and 1/3). Press one portion of mixture evenly over base of one prepared pan; repeat with another portion in the second pan. Refrigerate while preparing Filling.

For the filling, combine chocolate, condensed milk and butter in a small pan; stir over low heat for about 2 minutes or until chocolate is melted. and essence; mix well.

Scatter nuts over the base and spread filling evenly over. Crumble remaining mixture over filling in pan (Can sprinkle top with coconut). Bake in a moderate oven for about 30 minutes or until browned. Cool in pan.

Cover and refrigerate for several hours before cutting into bars.
