Choc-Caramel Balls

Choc-Caramel Balls

150g butter
3/4 cup brown sugar, firmly packed
1/4 cup cream
1 x 150g packet macaroons, finely crushed
1/4 cup crushed nuts
2 tablespoons coconut
300g dark chocolate
15g Copha
60g milk chocolate, melted

1. Melt butter in a medium, heavy-based pan. Add sugar, stir over low heat, without boiling, until sugar is dissolved and most of the butter absorbed. Bring to boil, simmer, without stirring, for 3 minutes. Remove from heat, allow bubbles to subside; stir in cream. Pour mixture into a bowl; cool.
2. Stir macaroons, nuts and coconut into mixture. Refrigerate.
3. Roll level teaspoons of mixture into balls, place on a tray. Cover; refrigerate until firm.
4. Melt dark chocolate and Copha in a bowl over hot water. Dip balls into mixture, place on a sheet of paper; refrigerate until set. Drizzle milk chocolate over chocolate balls.
