Cherry Coconut Tart

1 flan pastry case, blind baked and cooled
3 eggs
2/3 cup caster sugar
1/4 cup plain flour
1 teaspoon vanilla
1 1/2 cups coconut
500g cherries, pitted
Icing sugar to dust

1. Whisk eggs, sugar, flour and vanilla together. Stir in coconut.
2. Pour into flan case and press cherries into mixture, arranging in a nice circle pattern.
3. Bake at 200c for 25-30 minutes or until set in the centre.
4. Stand for 20 minutes then dust with icing sugar and serve warm.
